Sencha is a Japanese green tea from the leaves of the Camellia sinensis. In contrast to Chinese green tea, which is baked in pan or wok. The leaves of Sencha are steamed to prevent oxidation of the tea leaves. Then the leaves are rolled, shaped and dried. In this method, the tea becomes greener, more bitter and more grassy than the Chinese green tea.
